  • 8 ounces diced green chilies
  • 1 tsp cumin
  • 1 tbsp salt
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 2 tbsp fresh cilantro chopped
  • 1 cup sour cream
  • 1/2 cup heavy cream
  • Juice from 1/2 lime

  • Heat the olive oil in a large pot over medium heat.
  • Add the garlic and onions and cook just until soft, about 5 minutes.
  • Add in the chicken, green chilies, seasonings, and chicken stock.
  • Bring to a soft boil and cover.
  • Simmer the chicken until it is tender and pulls apart easily, about 15 – 20 minutes.
  • Remove chicken from the pan and shred.
  • Drain and rinse the beans.
