Ingredients
- 1/4 cup olive oil
- 3 large boneless/skinless chicken breasts
- 1 medium onion, diced
- 2 garlic cloves
- 3 – 15 oz cans great northern white beans
- 32 oz chicken stock ( I homemade mine from scratch)
- 8 ounces diced green chilies
- 1 tsp cumin
- 1 tbsp salt
- 1 tsp dried oregano
- 1/2 tsp black pepper
- 2 tbsp fresh cilantro chopped
- 1 cup sour cream
- 1/2 cup heavy cream
- Juice from 1/2 lime
Directions for White Chicken Chili Recipe
- Heat the olive oil in a large pot over medium heat.
- Add the garlic and onions and cook just until soft, about 5 minutes.
- Add in the chicken, green chilies, seasonings, and chicken stock.
- Bring to a soft boil and cover.
- Simmer the chicken until it is tender and pulls apart easily, about 15 – 20 minutes.
- Remove chicken from the pan and shred.
- Drain and rinse the beans.
- Add beans, cilantro, and shredded chicken to the pot and simmer on low for 10 more minutes.
- Remove from heat and stir in the sour cream and the heavy cream.
- Last, squeeze in the juice from 1/2 of a lime, stir, and enjoy!
You can serve this white chicken chili recipe with some additional chopped cilantro, a little lime, or even some shredded pepper jack cheese. Soo good!
