Nectarine Salad with Mozzarella and Balsamic Glaze

Description

This fresh nectarine salad combines juicy nectarines, creamy mozzarella, fresh basil, and a drizzle of balsamic glaze. A quick and easy summer recipe that works for lunch, potlucks, or parties.


Ingredients

Scale
  • 2 ripe nectarines

  • Fresh mozzarella (I like to buy the presliced log)

  • Fresh basil leaves

  • Balsamic glaze

  • Sea salt


Instructions

  1. Dice the nectarines – Cut two nectarines into bite-sized chunks and place them in a bowl.

  2. Slice the mozzarella – Take about three slices of fresh mozzarella and cut them into bite-sized pieces. Stir them together with the nectarines.

  3. Add fresh basil – Chop a few fresh basil leaves and sprinkle them on top.

  4. Season and drizzle – Finish it off with a sprinkle of sea salt and a drizzle of balsamic glaze.


Notes

This recipe makes one serving but can easily be scaled up for a crowd. Don’t worry about exact measurements. Add more mozzarella if you love cheese or an extra nectarine if you want more sweetness. It’s flexible and hard to mess up.
