- 3 slices of bacon, diced
- 1 large onion, diced
- 1 red bell pepper, diced
- 3 cloves garlic, finely chopped
- 3 cups smoked beef brisket, chopped
- 3 tbsp chili powder
- 1 tbsp cumin
- 1/2 tbsp chipotle seasoning
- 1/2 tbsp smoked paprika
- 1 – 15 oz can diced tomatoes
- 1 – 15 oz can tomato sauce
- 1 – 15 oz can of kidney beans
- 1 – 15 oz can of black beans
- 1 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- 1/4 cup brown sugar
- 2 cups chicken stock
Instructions
- Saute bacon, then remove the cooked bacon from the pan and set aside.
- Add onions, bell pepper, and garlic to the pan with the bacon drippings and cook until soft.
- Add meat and dry seasonings. Cook for one minute.
- Rinse and stir in the beans. Stir in the rest of the ingredients (including the reserved bacon) and deglaze the bottom of the pan.
- Cover and simmer on low heat for at least 30 minutes.
